Filosofia di Piana del Lentisco

Our  Oilsophy

Innovating tradition and cultivating with passion are the human ingredients with which we enhance our extra virgin olive oil every day. We are in Gagliano del Capo, in the Land of Leuca, on the symbolic border of southern Salento. We have always dedicated ourselves to the cultivation of olive trees and the production of extra virgin olive oil, the tradition of our family, handed down through five generations since the distant year 1856. From caring to the land to harvesting, from milling in the olive press to packaging, everything takes place on our estate, with the care of family management, to ensure an authentic, artisanal and genuine extra virgin olive oil. In today’s dynamic scenario of renewal in Salento’s olive growing, we enthusiastically and dedicatedly embrace the challenge of both agricultural and cultural regeneration, aiming to project the ancient art of “making oil” into the future and giving life to an extra virgin oil deserving in both tate and heart.

Olive groves

Quality starts in the field and with the daily care of the plants. For the cultivation of our olive groves, in addition to following the principles of organic farming, we are inspired by the principle of the health of the rural biosystem. We consider each of our olive trees as unique and indivisible entity with the land in which it is rooted, the air and the sun from which it drawns energy, the spring water with which it is irrigated, and spontaneous plants surround it. We see ourselves as responsible custodians of a very delicate balance that must be preserved. Through technological innovation and continuous education, we choose, every day, to implement low – impact cultivation habits to have healthy and wholesome olives.  We preserve with respect the traditional values of agricultural work, handed down by our family, to graft them with new visions and modern sensibilities.

Oil Mill

In Salento, the production of extra virgin olive oil had very ancient origins and over the centuries has become the distinctive symbol of our land. This rich historical heritage intertwines with the story of our origins and the dedication to olive growing that we have inherited from or family. While the passion has remained unchanged, the tools for extracting oil from olives have undergone significant changes over time: from the old mills of the underground oil mills, powered by animal strength, we have moved on to sophisticated and modern processing systems. The pressing within a few hours of harvesting in the company mill, the innovative continuous cycle and temperature – controlled extraction system, along with meticulous monitoring of all phases of the production process, allow us to purse perfection and quality.

Packaging

To best preserve the quality of our extra virgin olive oil until it reaches the table, from pressing to bottling, we handle it with great care, we let it rest in the dark, in stainless steel containers at a controlled temperature and protected from oxygen. These precautions ensure the preservation of all the precious and delicate volatile, sensory and organoleptic components that along with the naturally present polyphenols, antioxidants contribute to its quality, taste, and aromas. In our modern storage and packaging facility, we bottle small batches to ensure meticulous attention to detail, following strict control and cleaning procedures. For this crucial final phase of the production chain, we deliberately chose semi-automatic equipment because we believe that intellect, hands, and heart are the human elements that an ethical and sustainable production model cannot do without. 

Short supply chain and 100% italian artisanal processing

We take care of our family - owned olive groves located the Agro of Gagliano del Capo and Alessano. In the company mill, the olives are crushed within a few hours of harvesting. All processing stages, from cultivation to bottling, are personally monitored and managed by us.

Oliveti

La qualità parte dal campo e dalla cura quotidiana delle piante. Leccino, Ogliarola Salentina e Favolosa sono le nostre cultivar di olivo. Come a fine ‘800 la viticoltura europea ha superato con successo la sfida della peronospora, così il Salento si trova oggi ad affrontae la sfida della Xylella, con la riqualificazione del patrimonio olivicolo. Lo spirito che ci anima è continuare a coltivare la passione della nostra vita, l’Olivicoltura, convinti anzi di doverci impegnare ancora di più rispetto a chi ci ha preceduto, per salvaguardare il nostro territorio e riscattare la tradizione secolare dell’olivicoltura Salentina con l’innovazione e la qualità.

Frantoio

La produzione di olio extravergine e la coltivazione dell’olivo in Terra di Leuca risale al 726 a.c. ad opera dei Monaci Basiliani, ed è diventata nei secoli il simbolo distintivo della nostra terra. Con questo ricco patrimonio storico si intreccia la trama delle nostre origini e della dedizione all’olivicoltura che abbiamo appreso della nostra famiglia. Se la passione è rimasta inalterata, gli strumenti per estrarre l’olio dalle olive invece sono cambiati molto nel corso del tempo: dalle vecchie macine dei frantoi ipogei azionate dalla forza animale, si è passati a sofisticati e moderni sistemi di lavorazione. La molitura entro poche ore dalla raccolta nel frantoio aziendale, l’innovativo sistema di estrazione e ciclo continuo e temperatura controllata, insieme ad uno scrupoloso monitoraggio di tutte le fasi del processo produttivo, ci permettono di ricercare perfezione e qualità, nel rispetto dei più alti standard igienico sanitari. La tradizione va custodita, ma rinnovata per migliorarci.

Confezionamento

Custodiamo il nostro olio extravergine con grande attenzione, conservandolo al buio in silos di acciaio inox, a temperatura costante e al riparo dall’ossigeno. Nel nostro moderno locale di stoccaggio e confezionamento, imbottigliamo piccoli lotti per garantire ai prodotti tutta la vita utile dopo l’arrivo in tavola e seguiamo scrupolose procedure di controllo e pulizia. Per questa fase fondamentale della filiera, abbiamo scelto volutamente attrezzature semiautomatiche perchè siamo convinti che testa, mani e cuore siamo la parte umana da cui non può prescindere un modello produttivo etico e sostenibile.
